Keeping it cool is the name of the game this summer! Who doesn’t have great memories of the ice cream truck finding its way to your neighborhood just in time to save you from melting away in the hot July sun? Those Missle Pops, Fudgsicles and Push Up Pops were the stuff that great summers were made of! With ice cream trucks hard to come by these days, the next best thing is a homemade popsicle bursting with tropical pineapple and coconut. Had something more adult in mind? Substitute some Malibu Rum for the coconut water and let the party begin!
Pina Colada Popsicles
Ingredients
- 1/2 cup plus 2 tablespoons pineapple juice from the canned pineapple
- 1-20 ounce can pineapple chunks preferably in own juice
- 1/2 cup cream of coconut shake well before adding
- 1/2 cup coconut water with pineapple or substitute with Malibu Rum if making an adult treat
- 1 teaspoon coconut extract
- 4 teaspoons white sugar
Instructions
- Add all ingredients to a blender.
- Blend well.
- Pour into popsicle molds or Dixie cups.
- Freeze for at least 24 hours.
- Enjoy!!!
