This is some tasty rice that makes the perfect base for a burrito bowl. Or a great side dish alternative to Mexican rice. Super easy to make it your own, too. Use lemons, limes or a combo of both.  Prepare rice as directed. I like to include a splash of olive oil, a teaspoon of Kosher salt and a bay leaf.

Cilantro Lime Rice
Ingredients
- 2 cups uncooked Basmati rice
- water for cooking rice
- 1 bay leaf
- 2 tbsp butter
- 1 teaspoon Kosher salt
- 2 tbsp cilantro chopped
- 1 tbsp lime juice
- 1 tbsp lemon juice
Instructions
- Cook rice per package instructions with the addition of one bay leaf and a total of 1 tsp salt added to the cooking water.
- Once rice is cooked, remove the bay leaf.
- Transfer rice into a large bowl.
- Add butter and toss to melt and coat the rice.
- Add lime juice, lemon juice and cilantro. Season to taste with additional salt. Toss one more time and serve!
