The name says it all.  This is a fantastic all-purpose marinade for chicken, fish, shrimp, even veggies.  So much flavor, and so easy to put together!  Use this recipe year round…in the winter I make my family’s  favorite Double Lemon Chicken with Fried Capers and in the summer simply marinate  shrimp or chicken thighs and throw on the grill for an unforgettable meal.

Double Lemon Chicken with Fried Capers

Ingredients
  • ¼ cup olive oil
  • juice of one lemon (3-4 tablespoons)
  • 2 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon finely chopped flat leaf parsley
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
Now it is up to you to decide what you want to marinate in it!
Boneless, skinless chicken thighs
Chicken breasts
Shrimp
Fish
Veggies
Go crazy
Instructions
  1. Combine all ingredients in a bowl and whisk until combined to a salad dressing consistency.
  2. Place your meat or fish of choice into a large resealable plastic bag.
  3. Pour marinade over chicken or seafood.
  4. Seal bag and squish marinade around to make sure it is evenly coated.
  5. Place in refrigerator for at least two hours and as long as all day with chicken. Shrimp and seafood up to two hours.
  6. Make sure to turn the bag half way through.
  7. Remove from marinade.
  8. Sprinkle with salt and pepper to taste if desired.
  9. Cook indoors or on a grill for spectacular results!
